When is chicken a protein noodle? When it is thinly sliced and layered like pasta into this inspired take on keto lasagna.

How To Make Our Protein Noodle Lasagna

Ingredients:


  • 1 pound bulk Italian sausage 
  • 12 ounces ground beef 
  • tablespoons chopped onions 
  • 2 cloves garlic, minced 
  • cups marinara unsweetened, homemade or store-bought 
  • pound ricotta cheese 
  • 1 large egg 
  • ½ teaspoon fine sea salt 
  • 16 thin slices deli chicken breast (about 8 ounces)
  • 12 ounces mozzarella cheese, sliced 
  • ¾ cup grated Parmesan cheese (about 6 ounces)

Instructions:

      1. Preheat the oven to 425°F.
      2. Put the sausage, ground beef, onions, and garlic in a Dutch oven over medium heat. 

Cook until the sausage and beef are well browned, about 5 minutes, stirring often to crumble the meat. Stir in the marinara and remove from the heat.

      3. In a medium-sized bowl, combine the ricotta, egg, and salt.
      4. To assemble the lasagna, spread 1½ cups of the meat sauce in a 13 by 9-inch baking dish. Arrange half of the chicken slices over the meat sauce. Spread half of the ricotta mixture over the chicken. Top with one-third of the mozzarella. 

Spoon 1½ cups of the meat sauce over the mozzarella and sprinkle with ¼ cup of the Parmesan.
Repeat the layers, using the rest of the meat sauce, chicken, ricotta, mozzarella, and Parmesan.

      5. Cover and bake for 25 minutes. Uncover and bake for an
additional 25 minutes, until the cheese is melted. Let cool for 15 minutes before serving. Store in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 1 month. To reheat, place in a preheated 375°F oven for about 8 minutes.

Tip: 
If you use part-skim mozzarella, there will be excess moisture in the dish after baking; you may have to drain some of the moisture.
