Cookie Dough Keto Ice Cream recipe makes 15 servings
Ingredients:
- ▪️2 tbs of vanilla
- ▪️13.5 oz can of coconut milk
- ▪️1 cup allulose
- ▪️1/4 tsp xanthan gum
- ▪️2 cups heavy cream
- ▪️1/2 bag of chocolate chip cookie mix I used (pure organic)
- ▪️1/2 stick of butter room temp
- ▪️1/2 block cream cheese room temp
Instructions:
- ▪️Mix together butter, cream cheese, and cookie mix to make a nice edible cookie dough.
- ▪️Set mixture in the fridge while preparing the rest.
- ▪️Mix allulose, vanilla, and coconut milk in a saucepan and simmer on medium heat for 1 minute.
- ▪️Remove from heat and sprinkling in xanthan gum and stir until dissolved.
- ▪️Whip heavy cream in a stand mixer.
- ▪️Fold heavy cream into the coconut milk mixture once it is fully cooled.
- ▪️Crumble in your cookie dough if you haven't eaten it all already.
- ▪️Pour all into a parchment-lined 8x8 cake pan and place it in the freezer overnight.
- ▪️Pull out icecream 20 minutes prior to serving.
