Finding a low-carb keto ice cream at the supermarket that’s also difficult. Keto Cookie Dough Ice Cream is better than store-bought, made low-carb with various sweetener and milk options to tailor to your personal preference. 


Cookie Dough Keto Ice Cream recipe makes 15 servings


Ingredients:


  • ▪️2 tbs of vanilla
  • ▪️13.5 oz can of coconut milk
  • ▪️1 cup allulose
  • ▪️1/4 tsp xanthan gum
  • ▪️2 cups heavy cream
  • ▪️1/2 bag of chocolate chip cookie mix I used (pure organic) 
  • ▪️1/2 stick of butter room temp
  • ▪️1/2 block cream cheese room temp



Instructions:


  1. ▪️Mix together butter, cream cheese, and cookie mix to make a nice edible cookie dough.
  2. ▪️Set mixture in the fridge while preparing the rest.
  3. ▪️Mix allulose, vanilla, and coconut milk in a saucepan and simmer on medium heat for 1 minute.
  4. ▪️Remove from heat and sprinkling in xanthan gum and stir until dissolved.
  5. ▪️Whip heavy cream in a stand mixer.
  6. ▪️Fold heavy cream into the coconut milk mixture once it is fully cooled.
  7. ▪️Crumble in your cookie dough if you haven't eaten it all already.
  8. ▪️Pour all into a parchment-lined 8x8 cake pan and place it in the freezer overnight.
  9. ▪️Pull out icecream 20 minutes prior to serving.
