HOW TO MAKE A KETO JALAPENO POPPER STUFFED MINI MEATLOAVES
Ingredients
- ▪️1 onion
- ▪️1 tsp chili powder
- ▪️salt and pepper
- ▪️2 lb ground beef
- ▪️1 cup shredded cheddar
- ▪️1/2 cup almond flour
- ▪️2 eggs
- ▪️2 tsp liquid smoke
- ▪️3 jalapenos
- ▪️3 oz cream cheese
- ▪️1/4 cup mozzarella
- ▪️6 strips bacon
Instructions
- ▪️Cut tops off of jalapenos and gut them.
- ▪️Mix cream cheese and mozzarella and stuff it into the peppers.
- ▪️Mix all remaining ingredients except for bacon, put those to the side.
- ▪️Once the meatloaf mixture is thoroughly mixed divide it into 3 portions.
- ▪️Take a meatloaf portion and mold it around a stuffed jalapeno forming a little loaf. Repeat this two more times.
- ▪️Wrap the loaves with two strips of bacon each.
- ▪️Bake at 400° for 55 minutes.
- I topped mine with bbq sauce
