No-Bake Keto Cheesecake

If you’re tired of the heat and but still have a sweet tooth, then this delicious keto no-bake cheesecake is the answer to your prayers. It’s good for little school lunchboxes or your end of summer bashes!
Made this amazing No-Bake Keto Cheesecake! It turned out super good! Really good flavor and you can’t even tell it’s keto. 100% like the real thing!

How to Make a No-Bake Keto Cheesecake


No-bake ‘graham cracker’ crust

  • 2 cups almond flour
  • 3 teaspoons Erythritol or Stevia
  • 2 tablespoons butter
  • 1/8 teaspoon cinnamon
  • Pinch of kosher salt


  1. Toast the almond flour in a pan and then mix in a bowl with other ingredients. 
  2. Press flat along the bottom and up part of the sides of a springform pan.

No-bake cheesecake filling

  • 1 Quart of heavy whipping cream
  • 1 cup of Erythritol or Stevia (or to taste)
  • 2 packs of cream cheese

  1. Whip the heavy whipping cream until it’s whipped cream, then add cut up pieces of cream cheese and mix until stiff. Add Erythritol as you go. 
  2. Scoop into the springform pan and spread evenly, careful not to disturb the crust. 
  3. Put in the fridge to set.

Strawberry topping

  • 2 large cartons of strawberries
  • 3-4 tablespoons of Erythritol or Stevia
  • 1 tablespoon Xanthan gum (Available at Whole Foods, Kroger or Amazon)

  1. Chop up strawberries and put in a pot over medium heat with Erythritol. Cook until very juicy and strawberries have become mushy. 
  2. Sprinkle xanthan gum over the top and mix in. Cook for another 10 minutes and then remove from heat and let cool.
  3. When the strawberry topping is cool, remove the side portion of the springform pan and either scoop the strawberry topping on top or scoop on once sliced and plated.
