How to Make a No-Bake Keto Cheesecake
Ingredients:
No-bake ‘graham cracker’ crust
- 2 cups almond flour
- 3 teaspoons Erythritol or Stevia
- 2 tablespoons butter
- 1/8 teaspoon cinnamon
- Pinch of kosher salt
Instructions:
- Toast the almond flour in a pan and then mix in a bowl with other ingredients.
- Press flat along the bottom and up part of the sides of a springform pan.
No-bake cheesecake filling
- 1 Quart of heavy whipping cream
- 1 cup of Erythritol or Stevia (or to taste)
- 2 packs of cream cheese
- Whip the heavy whipping cream until it’s whipped cream, then add cut up pieces of cream cheese and mix until stiff. Add Erythritol as you go.
- Scoop into the springform pan and spread evenly, careful not to disturb the crust.
- Put in the fridge to set.
Strawberry topping
- 2 large cartons of strawberries
- 3-4 tablespoons of Erythritol or Stevia
- 1 tablespoon Xanthan gum (Available at Whole Foods, Kroger or Amazon)
- Chop up strawberries and put in a pot over medium heat with Erythritol. Cook until very juicy and strawberries have become mushy.
- Sprinkle xanthan gum over the top and mix in. Cook for another 10 minutes and then remove from heat and let cool.
- When the strawberry topping is cool, remove the side portion of the springform pan and either scoop the strawberry topping on top or scoop on once sliced and plated.
